Lets Get beefy Up In Here!

Its been a week since I had made this but, its been the best week ever as this is one delicious creation. I had no plans of making it. However, once I saw that ever-enticing sale sign below 1kg of stew beef I knew the fate of my stomach would be satisfied for the days to come. It ended up taking an hour and a bit due to reducing the amount of water but, took almost zero effort which is always a positive as a university student.


To accompany the beef I bought a can of corn, red kidney beans, diced tomatoes, and beets (such a big fan!).


First I found an onion laying around the kitchen that my roommate had bought a little while back. Chopped that bad boy up.


Found a fairly large pot and cranked the heat up to a modest 7. Added a slurp of olive oil, balsamic vinegar, and a good amount of sugar to get some interesting caramelization. 


After I felt satisfied with the smell of the onion mixture I added my meat. Nothing better than a pot full of read meat! At this point I also added a hefty amount of cayenne, paprika, oregano, and pepper as it seemed fitting.


I browned the meat, flipping every few minutes before adding anything else.


Next, I got real culinary on this meal by straining the corn and kidney beans. I may need a glass of wine after this much work.


I added these fresh veggies to my pot along with the beets and tomatoes (with their respective liquid).


Mixed it up a bit and added a good dousing of Sriracha hot sauce and lime juice. I like sourish soups/pickled things so the added lime gave it just what was needed.


Put on the lid and left it to simmer for a little while. It tasted better than life at this point.


Any finally after a good 30-45mins later of simmering, my masterpiece was ready to be consumed by my roommate and I. I don't want to brag but, he ate two large bowls in one sitting.. I think we have a success!
As always, I just used intuition and guess work for quantities and ingredients. It was a lot of fun to make and made for excellent lunches for the rest of the week! I listened to TiĆ«sto's club life #252 during the whole escapade. It was marvellous and always hosts incredible new tracks.
