The ingredients I ended up with were:
Cayenne, Paprika, Oregano, Pepper, Cumin
Ginger (Seriously one of the most versatile foods in the world)
Miso salad dressing (My roommate made a lot and it was delicious, so why not)
Olive oil
Eggplant (these are growing on me!)
Red peppers
Chick peas
Tomatoes
Feta cheese (Because life is too short)
and some Quinoa for filler!
Sliced up the eggplant!
Threw in some seasoning with a slurp of oil
Added the miso dressing to optimize on blowing my tastebuds
Red pepper looks really boring
Started to assemble in semi-creative manor. I had no idea where I was going with it at this point
Figured I could use more ginger in my life (I have it with everything..)
Found some tomatoes hiding in the back of the fridge..not on my watch!
Added the tomatoes and emptied a can of chick peas in.
Let this bake at 400 for 20ish minutes. Still wondering what the hell I am doing
Obviously this meal needs some quinoa!
It was looking a little dark and angry so i cut up some feta cubes.
I let it bake for another 20 minutes. The apartment started to smell pretty delicious. This is the final product: proving that vegetables can be exciting even without their better half (meat).
Overall, this turned out better than I had expected. I learned a valuable lesson from it as well: do not underestimate cayenne powder. I may have added a little too much, to the point where I was sweating. Leftovers were however much tamer which is glorious because it can get awkward when you're in the library perspiring with every mouthful.
